Questions

Frequently Asked.

Everything you want to know about Wise Guys — finding the truck, the menu, booking us for a party, and how a real wood oven ends up bolted into a Freightliner.

Finding the Truck

Where can I find you?

Check the Schedule section on this page for the current week's stops. We rotate between Tivoli Village, breweries in the Arts District, lots in Henderson, and Red Rock. Instagram @wiseguystruck has the most up-to-date drops.

Do you have a permanent location?

No. We're a single mobile truck, by design. The wood oven, the dough station, and us — all on board. If you want Wise Guys, you find the truck.

Can I call ahead and reserve a pie?

Sorry — we work the window in order. Walk-up only at public stops. If you're booking the truck for a private event, that's a different conversation — see "Book Us".

How long is the wait?

Sorry — we work the window in order. Walk-up only at public stops. If you're booking the truck for a private event, that's a different conversation — see "Book Us".

The Menu

Is every pie really $17.99?

Yes. One price, every pie, every stop. We don't do upsells, sizes, or premium toppings. We're not a restaurant doing margins — we're a truck doing volume.

Do you have gluten-free crust?

Always. We carry a gluten-free crust and a cauliflower crust on board every shift. Note we share the oven with regular dough — not safe for celiac, but fine for gluten preference.

Veg / vegan options?

Veg options every shift (Margherita, Four Cheese, Veggie Garden). Vegan cheese is available with 24-hour notice at private events — we don't always carry it at public stops. Ask at the window.

Booking the Truck

Can you cater my wedding / event?

Yes. Two-hour minimum, sliding scale by headcount. We bring the oven, the dough, the cheese, everything. We need a parking space (25 ft), clear overhead (chimney clearance), and a chunk of asphalt or pavement. Email us for a quote.

What do you need at the venue?

A flat 25-foot parking space and roughly 12 feet overhead for the chimney. We're self-contained for water, propane, and power — the only thing we ask for is access. Indoor venues aren't a fit (the truck is the oven, and the oven smokes).

How far do you travel?

Anywhere in the Las Vegas valley is included. Boulder City, Mt. Charleston, or anything 30+ miles outside the valley adds a small travel fee.

The Oven & Food

You really cook in a wood oven on the truck?

Yes. A 1,200-pound brick oven, fired with almond and oak, bolted into the truck. Reaches 850°F. Cooks a pie in 90 seconds. It's the whole point.

What if it rains?

We roll in light rain. Heavy rain or wind, we cancel and post on Instagram. Booked events get rescheduled or refunded — your call.
